Did you know that the carotene in carrots is converted into a Vitamin A by your own body, which helps improve your eyes vision in the day and at night. Also, it was proven that people who have higher levels of beta-carotene they have less chances of getting many kinds of cancer. Some time ago I read that if you cook the carrots just slightly then you help the fiber in carrots release more of beta-carotene which helps you body absorb it better.
